Nearly every boss in the Kindom Hearts game series is great to fight. Kingdom hearts was just naturally good at that, every fight was unique and I loved every one of them.

I never really do much video game bosses, as I sadly never get far in video games (always get distracted from finishing a game :<), but, I've always absolutely loved the boss music. A personal favourite is this:

All the Okami bosses seem to go so deep and are based off of actual legends and mythological creatures, and the way they're drawn is always intriguing. I'm not very good at judging how easy/hard a boss is though, but I think the bosses in Okami are pretty well done. Okami also has more then a few heartbreaking moments, there's especially one that happens in the final boss battle that I accidentally spoiled for myself for some reason.

The final bosses from Jak and Daxter, Jak 2 and Jak 3. I loved those games and I put so many hours into them. The bosses were fun to fight and a great way to finish off the story for that game. Metal Kor was the hardest in my opinion.
Almost every Final Fantasy boss is great, especially with the amazing music. But the one that stands out to me is Sephiroth, the one winged angel. (Boss of Final Fantasy VII). Ruthless, creepy, cruel, and he even has his own boss music! He was formed with an alien called Jenova, energy, and a human host.
Wasn't there a boss in Earthworm Jim, Bob the Killer Goldfish I believe, that all you had to do was push his bowl off the edge?
