If I could make doors and stairs out of dirt you bet your bacon I'd never have anything but a dirt house. It's the material of the gods. Without dirt and grass, my friend, you'll never get food. You can only grow wheat on farmland, made from - of course - dirt or grass. Passive mobs only spawn on it. It's easy to make shelter or temporary scaffolds from, since it can be quickly dismantled without any tools.
