They're back now! :D The heads shop appears to be a bit messed up. Rather than selling special mob heads you buy them. Not sure if this is an error or not.

This has since been fixed - Oak63

Was it my imagination or did there used to be a vendor which sold enderchests before the great shop reset?

There was one that sold enderchests, it was near the one that sold flowers.
